These Chocolate Peanut Butter Low Carb Granola bars are a nutritious and delicious snack to enjoy on the go. You only need 6 simple ingredients to make these granola bars full of chocolate flavor. They come together in under 30 minutes and can last all week long, making them excellent for meal prep.
Our cacao granola is loaded with sunflower seeds, coconut flakes, almonds, pecans, and more. It makes the perfect base for these easy low carb granola bars. This is the best recipe because our granola makes the process so much easier. Rather than sourcing all the individual ingredients, you can simply grab a bag of Nutrail granola and a few other pantry staples to whip up these delicious breakfast bars.
1/2 cup no sugar added natural peanut butter
2 large eggs
⅓ cup unsalted butter, melted
1/4 cup granulated low carb sweetener
11 ounces NuTrail Dark Chocolate granola
1/4 cup low carb chocolate chips, divided
Preheat the oven to 350 degrees. Line a 9x9-inch baking pan with parchment paper and set aside.
In a large bowl, beat the peanut butter, eggs, butter, and sweetener until well combined.
Fold in the granola and 2 tablespoons of chocolate chips until all of it is coated in the mixture, then scrape into the prepared pan.
Using wet hands or a small piece of parchment, press down firmly on the mixture to pack tightly into the pan. Sprinkle the remaining chocolate chips on top if desired.
Place the pan in the oven and bake for 15-20 minutes until the edges are firm and golden brown.
Allow the bars to cool completely before slicing and serving for at least 1 hour. For firmer bars: Store in the refrigerator.
